For the muffins
225 grams self-raising flour
225 grams superfine sugar
0,5 teaspoon baking powder
225 grams butter at room temperature
4 eggs
1 teaspoon British spice mix
2,5 centimeters candied ginger finely chopped
1 teaspoon ground ginger
For the icing (frosting)
1 tablespoon orange juice
250 - 300 grams icing sugar
1 teaspoon vanilla extract
2 egg whites
orange food colouring
black food colouring
Directions

1 For the muffins: heat the oven to 180°C ( 160°C fan) 350°F gas 4. Place paper cases in a 12 hole muffin tin. 2 Put the butter, sugar and flour in a mixing bowl. Add the eggs, baking powder and ground spices. 3 Beat with an electric whisk until smooth and creamy. Stir in the stem ginger. 4 Spoon the mixture into the paper cases and bake for 20-25 minutess until golden and risen. Place on a wire rack to cool completely. 5 For the icing: whisk the egg whites with an electric whisk until soft peaks form. Sift in the icing sugar and add the vanilla and continue to beat until thick and shiny. The icing should spread easily. If too thin, add more icing sugar. 6 Divide the icing in 3 and stir the orange juice and a few drops of orange food colouring into 1 portion7 Stir the black food colouring into another third. Spoon this icing into a piping bag fitted with a fine nozzle. 8 Spread orange icing over 6 muffins and the white icing over the remaining muffins. 9 Carefully pipe 3 concentric circles onto each muffin. Run a cocktail stick from the centre to the edge of the cake, through each circle of icing, to create a cobweb effect.
